Black Bean lite Gravy is a new healthy dish to try. It is simple to cook, but its taste is not so simple, I mean it is quite tasty. This dish is rich is nutrition. It saves a lot of time. I specially love the taste and smell of the recipe. Simply a quick, easy, tasty food to cook in instant pot. You can easily store this food for few days in refrigerator.

1½ cups of dry black beans.
1 tbsp oil .
1 finely chopped onion.
3 cloves garlic, minced.
1 tbsp ground cumin.
¼ tsp chipotle powder or smoked paprika.
6 cups of vegetable broth.
1 large bay leaf (optional).
2 tsp dried oregano leaves or 2 table spoon fresh.
½–2 tsp salt, to taste.
Soy yogurt or sour cream.
Chopped cilantro (garnish) (optional).
Procedure to cook –
Boil the black beans in the instant pot for 5 minutes. It is better to soak the black beans in water for few hours. If you do not get time to do so, then you could use plain soda powder to boil the black beans faster.
Heat the oil in the cooker with Instant Pot [Sauté] function. Add the onion and sauté for 2 minutes. Add the garlic, cumin and chipotle powder. Add the beans, broth, bay leaf (although bay leaves are optional. It is just used to enhance the taste) and oregano and stir well.
Lock on the lid in place and set the cooker to “Soup” for 7 minutes. To make gravy you need to choose soup option. When the 7 minutes is up, let the pressure come down naturally.
When you are able, carefully remove the lid, tilting it away from you. Remove the bay leaf. At this point, you can mash the beans with a potato masher or use an immersion blender, or just keep the soup, as is. Add salt, to taste.
